Jackfruit Prep
- 2 cans young green jackfruit (drained & rinsed)
- 1 bay leaf
- 1 tsp sea salt
- 2 tsp apple cider vinegar
Marinade

- 4 cloves garlic, minced
- 1 tbsp oregano
- 1 tsp allspice
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1 cup Vegan Worcestershire
- 1 tsp curry powder
- ⅛ tsp cayenne pepper
- 1 tsp cumin
- 1 tbsp garlic powder
- 1 tbsp onion onion
- ¼ tsp red pepper flakes
- 1-2 tbsp olive oil for searing
- 1 tbsp tomato paste, optional
- 3-4 cups of vegetable stock
Instructions
- Place jackfruit in a medium-sized pot, and cover with water. Add a bay leaf, salt, and vinegar and boil for 10-15 minutes. Drain, cool, and tear into large chunks.
- Massage jackfruit with marinade ingredients and marinate at least 4 hours or overnight in a bowl or sealed plastic bag.
- Using a slotted spoon, remove jackfruit from marinade and add to pressure cooker* bowl. Use the saute setting to sear jackfruit in oil until deeply browned. If using tomato paste, add and cook until paste is brick-red.
- Add marinade sauce to pressure cooker, and cover jackfruit with vegetable stock. Use enough to cover completely.
- Pressure cook on medium for 20 minutes. Release steam. Jackfruit should be tender and easily flaked apart with a fork. If not, pressure cook for 10 more minutes.
*If you do not have a pressure cooker, after searing, cook on stove top instead for 30-45 minutes to reach desired texture.
