Vegan Maple Coconut Ladoo Recipe

INGREDIENTS:

1 cup grated coconut (fresh or desiccated)

1 cup chickpea flour (besan)

1/2 cup maple syrup (adjust to taste)

1/4 cup almond milk (or any plant-based milk)

1/4 teaspoon cardamom powder

A pinch of salt

2 tablespoons chopped nuts (almonds, cashews, or pistachios)

1 tablespoon coconut oil (optional)

 

DIRECTIONS:

1. Roast the Chickpea Flour: In a pan, dry roast the chickpea flour on low heat until golden brown and aromatic (about 5-7 minutes). Stir continuously to prevent burning. Set aside.

2. Combine Ingredients: In the same pan, add the grated coconut, maple syrup, almond milk, cardamom powder, and a pinch of salt. Mix well.

3. Cook the Mixture: Cook on low heat, stirring continuously until the mixture thickens and starts to leave the sides of the pan (about 5-7 minutes).
